2. Cut a seam through the center of each piece for the stuffing. Spread butter and salt over it. Place meat in a baking pan.
3. Pre-heat your oven at about 450F.
4. Once the stuffing has cooled down completely, mix in an egg and whisk away.
5. Stuff the meat with your stuffing.
6. Put the stuffed pork into the oven and it will be ready in about 30 minutes.

Chocolate Cranberry Pie - A Paleo berry-licious treat that you don't have to feel guilty about.

Ingredients:
Crust Ingredients:
-2 cups of almond flour
-1 egg
-2 tbsp of coconut oil
-1/2 tsp salt

Filling & Topping Ingredients:
-18 oz of frozen cranberries
-1/2 cup of coconut milk
-8 oz of 70% cocoa

Directions:
1. Preheat your oven at 375F.
2. Put your crust ingredients in a blender. Blend it until you get a crumbly dough texture
3. Lightly grease a pie baking dish and put the dough in it. Firmly press the dough to completely and evenly cover the surface of the entire pan.
4. Put the crust in the oven for about 15 minutes. Let it began to turn golden brown.
5. While the crust is cooking, put the milk in a small pot and bring it to a simmer.
6. Once the it starts to simmer take if off the heat right away and pour the chocolate into the pot. Mix it until completely melted. This is your filling.
7. Once the crust is ready take it out of the oven, pour your filling into the crust.
8. Put the pie in the fridge for at least 2 hours.
9. Put frozen cranberries in the oven. Bake for about 10 minutes. Once the berries have started to soften take them out the oven and put them in the fridge as well for about 1 hour.
10. Once the crust and filling is nice and solid and the berries are nice and cool, pour them on top of your chocolate filling.

Atkins Vs Paleo - What Works and What Doesn't

Recently I've seen a lot of websites and books make comparisons between the Paleo Diet and the Atkins diet. "It's like Atkins," they say, "but you can eat fruit!" I understand that a lot of people in our community are trying to convert non-believers from other diets. And I understand that having someone make the switch from Atkins to Paleo probably isn't much of a stretch. But in my opinion, trying to say the Atkins Diet is like the Paleo Diet doesn't do the Paleo Diet any favors and ignores the key concepts of the diet. It's really not like the Atkins Diet at all.

Atkins Vs Paleo - What Works and What Doesn't

The Atkins Diet is NOT the Paleo Diet

The Atkins Diet, for most people, is not a life-long endeavor. It's not a lifestyle. It's a way to cut weight by keeping your carbohydrates as close to zero as possible. I recently spoke to someone that mentioned she was going to do Atkins (again) because she was happy with her weight loss in Phase 1. And Phase 1 is understandably where most people fall off the Atkins wagon. Nobody wants to eat bacon and sausage every day of their life because eating a grape fruit would send their body out of ketosis and kill their weight loss.

The Paleo Diet isn't based on counting carbohydrates, or grams of fat, or even calories. It is based on the principle that you should eat what our ancestors ate. And that's it. Our ancestors didn't eat pre-packaged, sodium-rich "meat products" -- they ate MEAT. While these meat-products are fine on the Atkins diet as long as they don't add to your carbohydrate count, someone following a paleolithic lifestyle would assuredly pass on them. Our ancestors didn't eat Whole Grain Wheat toast or "Heart-Healthy" Cheerios, they ate wholesome vegetables, fruits, and nuts.

There is no induction phase for the Paleo Diet.

You don't lose weight rapidly for 2 weeks and then plateau off.Weight loss with paleo happens all the time throughout the course of your life until you reach your ideal body weight. Eating natural foods, you will find it extremely hard to reach enough calories to gain any weight and the closer you are to your ideal weight, the less calories your body will need to consume, the less you will eat.

Foods that are calorie dense (such as meats) will keep you full for hours, making you eat less of them. Between meals you can snack on fruits and vegetables that provide essential nutrients and vitamins but won't pack on the calories. Some vegetables and most fruits are severely limited or banned on the Atkins diet because of their natural carbohydrates.

In my experience on the Atkins Diet, there was never really a time that I didn't crave cakes, or sweets, or fruit. I tried to block them out. I tried to get my mind off of them. But I always wanted them.

On the Paleo Diet you don't miss out on the sweet taste of fruit -- because you can eat as much of it as you want. You don't miss eating cakes because you can make your own cakes without wheat flour. Pizza? You can eat that, too, as long as you make it yourself using natural ingredients. The best part of Paleo is the community. If you have a craving for something, you can be sure that someone else has made a paleo variation of it and posted it on the internet.

In the first four months after starting the Paleolithic Diet, I had lost over 40lbs and my wife had lost over 50lbs, eating delicious food that we wanted to eat.

Cholesterol in the diet comes ONLY from animal foods. It would be like having a cut on your finger and instead of putting a band aid on it, you keep rubbing it with sand paper. It won't ever heal.

Now, at this point, you may be nodding your head in agreement, but if not, don't take my word for it. Do more research and you will quickly find that I am right. Assuming you come to see that your diet is the cause of your pain, you begin to wonder what in the world you would actually eat, but there is very good news for you. You can begin eating foods that will not only reverse and completely stop gallbladder pain, but will also protect you against heart disease, cancer, diabetes, obesity and all other known ailments and diseases. So, what kinds of foods are they?

Well, they include vegetables, fruits, dark leafy greens, legumes, nuts, seeds and basically anything else in the vegetable kingdom. Remember, there is NO cholesterol in the vegetable kingdom and in order to allow your body to stop creating more and more gallstones that will continue to grow in size, you have to cut cholesterol out of your diet. There are many wonderful cookbooks out there and restaurants that will create delicious meals, so you don't suffer the withdrawal of not eating animals foods anymore. Just do a little research and more importantly, get started as soon as possible. If not, you will most certainly be at the mercy of your gallbladder pain which will continue to get worse and worse until you are forced to have your gallbladder removed. Please, remember that having your gallbladder removed does not solve the problem and most people find the pain continues after they have had their gallbladder removed.

There is one more important step involved with stopping gallbladder pain for good. Assuming you stop eating cholesterol, that means you won't get any worse and it will allow your body to start digesting and removing your current overabundance of cholesterol in the liver and gallbladder. But, the second thing you have to do is actively flush the gallstones out of your body. This usually comes in the form of a gallstone flush. I recommend a very high quality herbal flush that specifically goes to work on your gallstones. This is a one, two combination punch that will effectively and painlessly flush gallstones out of your body, allowing you to get back to your life. The worst thing you can do, by the way, is nothing. Continuing your current diet will simply continue to make your condition worse. It is December and it is time for my annual fitness year in review.

Sadly, it seems that the fitness industry at large has not made any great inroads into providing a short term, long term or any term solution to our country's large scale obesity epidemic that is not just a national crisis (oh yeah, it is a CRISIS on a freakin' GRAND SCALE) but, a world wide catastrophy (Alright, officially a pandemic).

SCARY STUFF, MAN... SCARY, SCARY STUFF!

The sickening fact that our country has become through both poor nutrition (NOTE-no thanks to some real crap and far too long perpetuated information from the mainstream) and a lack of REAL EFFECTIVE exercise, (NOTE-i.e. GARDENING, even if it is ALL OUT, REDLINE, HIGH INTENSITY INTERVAL WEED PULLING AND LAWN MOWING does not qualify as exercise...) not only more fat, more lethargic and more sick and getting sicker; we have succeeded in passing down to our youth a new disease called TYPE II Juvenile Diabetes. Now, this is just straight up NUTTS!

Man, things have gotten' screwed up big time! And, now we have to make things right. So, what I am going to do is provide some real positive upside strategies that, for lack of a better term, will be the fitness 'trends' of 2010. These ideas will help both our youth and adult populations find what maybe better solutions to acquire better health and well being.

What is done is done. Now, it's time to get this country back to being the STRONG & FIT nation we deserve to be!

Fitness Trend #1- Fitness Boot Camps Will Take Over One-On-One Personal Training

Hey, after this two year long recession who can afford a one-on-one personal training session anymore? Answer=Very few.

Well, with problems comes solutions. And, the emergence of the fitness boot camp has provided the solution to the personal training problem. Boot camps are the HOTTEST thing going on in the fitness world right now! The boot camp model provides the ultimate win-win for both trainers and clients making one-on-one training virtually obsolete. Fitness trainers are better able to leverage their time because they can provide their service to larger groups and maximize profits. Fitness clients (boot camp members) are better able to access personal training services in a unique and dynamic team environment that provides great motivation, energy, social support & accountability for only a third or less of the cost of the average personal training session.

Why is High Intensity Interval Training gaining rapid popularity? Because it freakin' works...BIG TIME!

It crushes endurance type training because endurance training (lasting 30-60 minutes or more)

focuses on volume of training. Here is a typical example: Your average runner will pound the pavement for the same amount of miles, at the same pace, over and over, day after day, week after week, month after month...beating down their bodies and getting less than exciting results from that investment of time and energy. They are burning off weight by wasting away muscle and destroying their metabolism at the same time. This method sounds like a poor ROI for someone who really wants incredible, long lasting results from their exercise program.

Fitness Trend #4- Fitness Boot Camps For Kids? Yeah, Why Not!

Lets face it many of our school districts have limited or eliminated gym class based on budgetary or other B.S. reasons. The reasons are not that important as the fact that now we have a real issue of addressing the fitness of our youth outside the school setting. (Unless the kids are involved in sports at their school). No worries though, because of Youth Coach Brian Grasso and his International Youth Conditioning Association, there is now a growing trend of youth specific exercise programming in fitness facilities throughout the world. The IYCA has developed incredibly effective programming that is relevant to age groups ranging from 6-9, 10-12, 13-15 & 16-18. The programming takes into consideration the neural development of pre and pubescent kids so they can learn and adapt movement and exercise in appropriate developmental patterns. A real important fact with youth and exercise is this: Kids that are exposed to fun and effective exercise early on tend to continue with a healthy and fitness oriented lifestyle for LIFE!
